Happy Friday!

Five Things Friday

Which of course, means Five Things Friday. Thanks to Clare for hosting!

5 Things I’ve Eaten Lately:

1. Whole wheat chocolate chip pancakes with peanut butter and maple syrup for dipping.

Pancakes This was basically the perfect breakfast-for-dinner. Pancakes are already pretty awesome, but chocolate chips and peanut butter only seal the deal.

2. Quinoa, arctic char, and roasted zucchini.

Quinoa, char, zucchini It was the first time I had tried char, and I have to say — I was impressed. I think I liked it even better than salmon…too bad it’s more expensive!

3. Shrimp and crab stirfry with thick vermicelli noodles.

Stirfry So I love eating stirfry regardless, but really I love the excuse to use chopsticks at home.

4. Eggs, deli turkey, and cream cheese on buttered popcorn flavoured rice cakes.

Eggs Delicious, but not particularly filling…which would probably explain why I was gnawing on a chunk of chocolate 30 minutes later. Oh well.

5. Pork chop with applesauce, spinach with dressing, and roasted sweet potato rounds.

Pork Chop dinner I’ve pretty much given up on making actual salads in favour of throwing some dressing on salad greens. Meh – it makes me happy and appeals to my lazy side.

5 Things Happening This Week:

1. I’ve been pretty lucky with giveaways lately. Last week, I received my latest win – a shipment of NuNaturals that I won from Lucie.

NunNaturals

Unfortunately, the Peppermint didn’t quite survive the journey Frown I’ve been testing them out, and I’m actually really impressed with the orange flavour, especially when added to anything chocolate. P.S. I’m fully attributing all my giveaway luck to my four lead clover tattoo – I have actually noticed that I’ve better luck in general since I got it done 6 years ago!

2. Blend has been announced for 2014 – it’ll be in Park City, Utah June 6-8th. Coincidentally, that’s a week after my self-imposed thesis/graduation deadline. A graduation present to myself? I think so. I remember feeling incredibly jealous reading the recaps last year, so I’m definitely planning on being there this time around!

3. When I went to a TRX class last Sunday, the wire that you attach the TRX too was tangled at the top so I had to pull out a big ladder to get up there and untangle it. But I managed to pinch my hand putting the ladder away – which I didn’t noticed until I glanced down 10 minutes into class and noticed that my hand was bleeding and I was missing some skin between my thumb and index finger. But the worst part of it? I haven’t been able to use the thumbholes in my sweaters on my right hand all week Frown

4. I get to meet up with this girl for lunch tomorrow! I haven’t seen Chelsea since September, which is practically criminal. We’re planning on going to The Beet Organic Cafe – locals, what do you think of it?

5. So this is what 1 kilogram of chocolate looks like when you break it down:

Chocolate That giant hunk of chocolate is 4 layers deep. And excuse the post-hot yoga hair.

Although, I should say 1 kilogram minus a few squares Wink Yes, dark chocolate is better for you, but some good ole’ Dairy Milk is amazing.

5 Things I’ve Pinned This Week:

1. You have no idea how true this is.

Pug (img source)

Every time both Eric and I leave, Atticus gives us the pouty-face look…although he gets a kong filled with peanut butter, so I don’t think he has any reason to complain Wink

2. Chocolate Peanut Butter Lovers’ Granola via Sally’s Baking Addiction.

Chocolate Peanut Butter Granola

Chocolate peanut butter lover? Yup, that’s me…and you, Becky Wink

3. Nutella Banana Pull-Apart Bread via Cupcake Project.

Nutella Banana

There are so many things about this that just sound amazing.

4. Household Items Useful for Food Photography from Pinch of Yum.

Household Items

Note to self: do not throw out old cookie sheets.

5. This.

Just this.

I likely won’t get around to posting on Sunday, so have a fabulous weekend!

<— Favourite pancake mix-in? Chocolate chips or banana slices for me!

<— Who else is thinking about attending Blend?

<— What toppings do you normally put on salads at home?

<— Do you believe in good luck charms?

  1. OOOmgsh you have no idea how badly I want to go to Blend. I just don’t know if I can afford it….. to be determined! That granola looks so delicious and give me that stir fry! Minus the chop sticks because I have yet to figure out how to successfully use them. Ahh well. Have a great weekend!

  2. That granola looks so amazing I cannot even comprehend it. I’ll just add it to my mile-long list of recipes that I need in my life!

And that last quote! It’s so true. We are all sososo preoccupied with the way we happen to look this very moment, but it’s natural for our bodies to change as we change. I’m a huge believer of inner beauty shining through, so it’s spot on for me. Love it.

  3. You can’t go wrong with whole wheat chocolate chip pancakes. You just can’t. I’ve never tried a TRX class but I really want to! My gym at home has them but I think they’re more like personal training sessions and I hate when the focus is just on me haha anyways, have a great weekend and have fun with Chelsea! Blog meetups are my favorite
Sarah recently posted..Sharing the LoveMy Profile

    • I’ve noticed that most gyms do TRX in the personal-training style, so I’m definitely considering myself lucky that my gym has it as a full class. And the meetup….bah. winter strikes again!

  4. your meals look incredible!!! Can I have the recipe for the stir fry please? YUMMY!! Will miss your Sunday meal plan and shopping again this Sunday!! Enjoy your weekend.

Can you eat the stems of the spinach leaves? I’ve always wondered this!!

    • It’s cooked crab meat and stirfry, about 6 cups of frozen veggies, a package of vermicelli noodles, and my stirfry sauce recipe – it’s in my recipage!

  5. Ooooh I gotta check out that home photography thing. And make a light box! #soon. I wanted to go to to Blend really badly but I just cannot afford those tickets to Utah, especially when I make like… 60$ a week. Maybe if I had a real job. I am going to try to save for a different blogging retreat later in the year though.

    • ahhhhh I’m going to try and convince you to come to Blend Definitely understand the pricey tickets though – I’m hoping that my parents will contribute to that as a grad present

  6. I’ve never been to The Beet but I’ve heard all kinds of amazing things about it. Have fun! Wish I could go!

  7. I don’t do pancake mix ins :(..I need to get with the times and throw some choc chips in there! I can’t wait for Blend recaps.. love seeing blends meet up . Why does the best seafood have to be so darn pricey!?

  8. gah so jealous you are thinking of going to blend. why oh why can’t it be closer and cheaper. one day I swear by it I will get there. I am amazed at your tasty food this week, you always are so good at putting actual meals together. one thing i need to get better about.

    • it definitely helps that I cook for two people…otherwise, there’d be a lot more lazy yogurt bowls and baked chicken and sweet potato on salads kinda meals.

  9. Chocolate chips are most definitely the best pancake mix-ins!

Ah, I won a NuNaturals giveaway too from Heather’s blog! That stuff is amazing! In fact, I’ll be having a giveaway on my blog next week and sharing a new recipe I came up with using it!

I’m highly considering going to Blend. Have you heard when the tickets go on sale?

We’ve been pinning a lot of the same stuff lately – I’ve been drooling over Sally’s granola and I love Pinch of Yum’s photography tips!

  10. Quinoa, arctic char, and roasted zucchini: my dream meal!! That sounds so delish!! I am planning to go to Blend so I can’t wait to finally meet you in person I am hoping to get a great turn out of people. It’s an awesome way to continue this community in ‘real life’.

  11. I really want to attend Blend…but at the same time, I want to go backpacking somewhere over the summer and so Blend money would probably be better spent doing that. But still…ahhhh. I don’t like this whole making-decisions-thing. Can I just be a kid again?
Beth @ Mangoes and Miles recently posted..What Running Taught Me About Eating Disorder RecoveryMy Profile

    • ahhhh while I think that going overseas would be an amazing opportunity (I’m hoping to do the same thing soon)….I still hope you’re able to make it out to Blend

  12. I am a huge chocolate peanut butter lover. best combo. those pancakes and that granola look amazing! happy friday

  14. And now I may have to get a four leaf clover tattoo. Maybe I’ll work that into the running one I want to get near my ankle all of those recipes sound amazing btw….you just gave me a huge hankering for nutella thanks to the pull apart bread haha. My favorite pancake add is either pumpkin or blueberry, and I will put just about anything on top of a salad except beets, canned fish or meat, and hardboiled eggs. Not a fan of those! Have a great weekend hun
    Caitlin recently posted..MagicMy Profile

    • haha buying a jar of nutella a few weeks ago was one of the better decisions I made lately and ohh, I haven’t had pumpkin pancakes in a while!

  15. The egg and turkey on the rice cake is a cool idea though rice cakes are very airy so I can imagine it may not have been too satisfying. Love the wheat choc chip pancakes! That was my go-to high school breakfast when dining out.
I did TRX yesterday! Thankfully mine did not end in an injury tho

  16. Blendddddd! I’m going! And currently trying to convince as many people as I can to go too. It’s going to be fantastical. And speaking of fantastical… you may have just decided dinner for me. Pancakes sound like a perfect idea, although I may try adding blueberries as opposed to chocolate chips. Not that I have anything against the chocolate, but I just finished chowing down on some, so my cravings are currently satisfied…. and I’m on a HUGE sugar buzz

  17. Isn’t arctic char awesome?! I like it even better than salmon too.

So excited for our lunch date tomorrow! Let’s never again go 4 months without hanging out, okay? Okay.

I definitely want to go to Blend, but it depends on if that Banff meet up is happening, because I’m sure sure that I can do both!
Chelsea @ Chelsea’s Healthy Kitchen recently posted..Blueberry vanilla energy ballsMy Profile

    • Oh my goodness come to Blend!! I may be bugging you about this over the next couple of weeks And I really hate winter. The end.

  18. Honestly, If I can coordinate my US/Canada trip well, I really want to go to Blend!!!!

And that would indeed be the ultimate graduation present! If that 1kg block of chocolate is dairy milk by Cadbury, my sister got gifted one for christmas and she left it out on the bench…..returning home later to chocolate soup.

I want pancakes so bad. Damn hotel living!
Arman @ thebigmansworld recently posted..Mum’s Fruit Free BiscottiMy Profile

    • YES!! You seriously should try to come, that would be amazing. And I’m in a hotel this weekend too, so I definitely feel your pain.

  19. Pinch of Yum does it again!

Wish I could be there for lunch! Have so much fun with Chels!

  22. Those chocolate chip pancakes looks delicious! With peanut butter and syrup as well? Truly an amazing combo! Shrimp and salmon are delicious as well as sweet potato circles. Yum! You had some delicious eats this week! That’s a lot of chocolate, but who doesn’t love chocolate?
Those pins look and sound fabulous!

  23. OMG that Nutella bread. Droooooling. I have to move out in 3 weeks, no matter what happens with the visa, so I am currently trying to eat all the chocolate in the house – it feels like more than a kilo!

  24. I <3 choc chip/peanut butter pancakes, and I <3 pancakes with maple syrup, but I can't really get my head around both combined. To me, chocolate chip pancakes always need to be eaten with one's hands, like big soft cookies at the breakfast table. And plain pancakes need to be DROWNED in homemade maple syrup.

That quote at the end is so helpful today. I usually roll my eyes at the whole inspirational-quote-on-photo-of-pretty-lady thing, but I guess that's what I needed to hear this morning. Thanks!

  25. Oh my gosh, you poor thing! I hope your hand is healed up ok by now…but yeah, that totally sounds like a Heather moment! Actually, I just pinched the #%$ out of my ring finger on a stretcher when I first started my shift…and I have no idea what I even caught it on!

I just saw Sally’s granola on Foodgawker and about died! And I was just thinking how I wish I had an old cookie sheet…then I remembered something…GOODWILL! Bam!

Love the pancake action…especially since it was BFD!! But don’t you DARE make me pick a favorite add in…can’t be done! I refuse!
