Happy Valentine’s Day!

So some people hate the Hallmark aspect of Valentine’s Day…but can we all agree that it’s cute, at least? Having a day dedicated to telling people that you love them isn’t a bad thing.  And eating chocolate. Yup – a day for chocolate is pretty wonderful.

Five Things Friday

5 Things I’ve Eaten Recently:

1. Pulled Chicken on a bun with green beans and nutritional yeast.

Chicken Sandwich Delicious, but sparked a craving for pulled pork…

2. Banana Oats in a jar.

Oats The end of the Justin’s jar is saddening, but delicious.

3. Leftover pulled chicken with guacamole on rice cakes and spinach salad.

Rice Cakes So BBQ and avocado. Do it.

4. Snack plate: cocoa roasted almonds, baby carrots and hummus, and apple chips.

Snack Plate to be honest, I’m just impressed with myself that I managed to get two servings out of the bag of apple chips.

5. Breakfast for dinner: Scrambled eggs, sweet potato tots, spinach salad.

5 Things Happening this Week:

1. So, the Olympics. I have to say, we’re kicking ass this time around! I haven’t been watching them nearly as much as I thought I would though, because the quality isn’t really the greatest online. But I randomly check the medal count throughout the day to make sure we’re still being awesome Wink

2. Blend tickets go on sale Sunday night! You’re all buying your tickets, right? 


Because…that would be fantastic Wink I can’t wait!

3. You don’t realize how much you REALLY rely on your cell phone until you lose service for a few hours. Last Friday, I was taking the bus home from school when my cell phone service provider went down. So when I got to the bus stop, I wasn’t able to call Eric to come pick me up…and ended up having to take a cab home. First world problem for sure, but still frustrating when I’m trying to ease up on spending.

4. After Atti’s eye injury a few months ago, I’m now paranoid as all hell about his eyes. Wednesday night, He looked up at me and he had a line right across his eyeball. So of course, I’m freaking out thinking that he scratched his eye. I managed to hold him and use a kleenex to move whatever it was….only to have it reappear a few minutes later. Cue: panic. Fortunately, Eric was home by that point and held him for me so I could really inspect it – it was a hair stuck on his eye. Sooo now I feel better. But will probably have many similar freakouts in the years to come. The things that happen when you have big bulgy eyes…

Atticus Looove him. And so happy that he’s healthy.

5. Assuming that the weather doesn’t cancel four meetups in a row for me…I’ll be heading to Toronto on Sunday for a blogger meet-up! So excited to see some awesome ladies again.

  1. I actually haven’t watched the Olympics at all! I’m probably the only person, haha. Nay to rock candy…guess I’ve always just been more of a chocolate kinda girl. The best thing I’ve eaten this week has been Spinach and mozzarella stuffed chicken from Peanut Butter Runner- super good and easy and I highly suggest it!

  2. Big, bulgy, ADORABLE eyes! I was worried about Atti too — I’m glad it turned out to be nothing And I seriously can’t believe you managed two servings out of the apple chips! They seem to disappear before I even realize that I’m eating them. Womp, womp.

    YES I’ve been watching the Olympics when I can manage it at a friend’s or family’s… And we’re definitely kicking some butt, although I guess it’s to be expected when you live in the land of ice and snow

    • ughhh you and me both – and I know I’m going to have a lot more freakouts like that. And that’s true – if anyone should be doing well in winter sports, it’s us Happy Valentine’s lady!!
  3. How have I STILL never had oats in a jar?!

    I’ve been watching alpine skiing religiously, but other than a few minutes here and there, that’s about it! I do find that it’s harder to get into the winter olympics, even though they make me feel so much more Canadian.

  4. I’m glad your dog is healthy and ok! I will not be attending BLEND (cue tears..) this year–plane tickets are $500 and I just can’t. AHHHH. There’s always next year, right? I haven’t been watching much of the Olympics, just ice skating. I prefer the summer Olympics WAY more. Have a great Valentine’s Day<3

  5. I love how you utilize rice cakes – with putting eggs on top, now the pulled chicken and guacamole. It sounds so tasty!

    So, I’m super bummed because last night I found out that Justin’s cousin is getting married the weekend of the Blend Retreat. Ugh! I can’t believe it! Justin said I didn’t have to go and that I could just go to the retreat instead, but I’m thinking the family won’t be too thrilled with that idea. Not fair!

  9. lately I swear all I have been craving are sweet potato fries or sweet potato tots. I even found a friend to get some for dinner with me tonight because this craving has gone on long enough. and serving sizes on bags are always about double of what actually comes out of them, I mean for example popchips. hello, one bag one serving. yes? no? same goes for apple chips.

    • how much longer do you have until your done? And they’re Alexia brand – I just found them in the natural food sections at Superstore! and Blizzards in general are pretty unbeatable.
  11. Oh yes! Loving the skating hockey and snow boarding so far I love those chalkboard candy boxes! Wish i had thought of that for the boys…they would have loved it! Maybe for easter best thing I ate this week was probably suz’s shepherd’s pie last night but Irish nachos tonight thanks to you will probably take the cake Have a great weekend hun!   13. Negative on the Olympics…not a big winter sports person. The best thing I ate this week were my Blueberry Banana Oat Muffins. Would love the recipe for the sweet potato tots! Also, the Blend retreat sounds great. I haven’t been to a blogger event yet and trying to decide on one to go to this year.
  14. Oh my gosh I loved rock candy as a kid. I haven’t had it since, but I can still picture the taste. I’m sure I would still love it. It tasted like PURE SUGAR.
