Hello and happy Wednesday!


Which of course, we all know is WIAW.  So jumping right into it!

I used to be really, really good at making deliciously awesome creative salads. Lots of ingredients, different flavours…all that good stuff. But in the last couple of months I’ve gotten so lazy with it…to the point where most of the time it’s spinach, maybe some roasted kabocha and salad dressing. If it’s a meal sized salad, I’ll throw some eggs or protein in there and I’m good to go. I miss my super-flavourful salads, but when it comes to actually making them I’ve been ridiculously lazy. Maybe once we start getting some more local fruits and veggies, I’ll be feeling more inspired? But until then…lazy salad-making it is.


Oat Breakfast Blueberry oats with chocolate coconut butter and an egg + egg whites. I never really used to buy frozen fruit, but I have been all over the frozen wild blueberries lately. Maybe it’s just to tide me over until berry season?


Lunch  Aforementioned lazy salad (spinach, kabocha, and dressing) with some cottage cheese and almonds on the side. I was actually craving some avocado on the salad, but the one I had in the fridge wasn’t ripe yet. Boo.

Dates Plus some dates for the sweet tooth.

Snack 1:

Banana PB Sliced banana with some homemade peanut butter. I couldn’t even tell you the last time I had this snack but why on earth did I wait so long to have it again? Best combo ever. Period.

Snack 2:

Carrots and Hummus  I got a little munchy after I took the dog for his walk (which by the way: the downside of warm days when there’s still snow outside…mud and slush everywhere! I can’t even explain how dirty that pug got in 25 minutes of being outside…) so baby carrots and hummus. Another classic.


Lasagna My favourite lasagna ever. I’m not sure how I made it through the vast majority of winter without making this recipe once…it’s so good! And perfect when it’s cold…or when it’s warming up, apparently.

Lasagna Dinner A nice hunk with the laziest version of salad (just spinach and dressing). Annnd I went back for a few more bites when I was putting the lasagna away.


Mugcake Amanda’s Double Chocolate Mug Cake, except with peanut butter chips so I can’t really call it double chocolate. And it was amazing, as per usual, especially with a bit of coconut butter on top.

And now I think I need another one of those mugcakes…

  1. I’ve put dressing on plain spinach and called it a salad more times than I can count. That, or pull out random ingredients and dump them on top of the spinach and call that a salad. Laziness at its finest.

    Also, chocolate coconut butter is a thing?! You should mail me some. For Rosie’s birthday. Because that totally makes so much sense.

  2. Hi 5 to eating kabocha. I legit just ate a child sized one. So good.

    Anything on spinach counts as salad. True story- I ate cold pasta AND cold lasagna on spinach before and called it Salad.

    PS If you have lasagna leftovers eat it cold.

  3. I hate when I’m craving avocado and they’re not ripe yet–worst thing ever! I’ve also been into frozen fruit more than I ever have before and I definitely think it’s because berries aren’t in season. Once they are, I’ll be all about them. Breakfast today (3 mins ago) was scrambled eggs and avocado toast My usual.

  4. I am such a lazy salad maker too. I just find it way too difficult to actually construct this beautiful salad unless I really really REALLY have that kind of time. i tend to find the easiest way to make a salad more classy is to put leftovers on top, whatever those leftovers may be

  5. I’m the laziest with salads. I literally will only eat them if I have pre-chopped all of my vegetables days in advance so I could just dump some plastic baggies into a bowl and call it a day. If it takes any long than that, I’m not eating it

  7. I’m definitely a lazy salad maker. I just toss whatever I have on hand into a bowl & prefer not to do any prep work.

    Fav salad combo is anything with avocado, beets & goat cheese. PB & sliced banana is always a good combo – LOVE THAT SNACK

  8. I only do the lazy-salad thing! Most of the time its just a bunch of salad leaves to go with my meal .. if I’m being fancy then we’ll add on some carrots/plum tomatoes.
    I always ‘forget’ about classical, match-made-in-heaven snacks like peanut butter and banana and tend to complicate things. I remember when I first tried it out, it became an every.single.day snack. That lasagna looks soo good!
    Breakfast was a sweet potato with crunchy PB and cottage cheese.
    I don’t see any signs of spring, but I can tell you it looks like we are skipping Fall and going straight into winter on my end of the world

  9. My biggest question would be… why are you keeping an unripe avocado in the fridge?! That puppy should be on the counter so it can ripen faster And don’t even get me started on how lazy I’ve become with my salads… Actually, my relationship with veggies isn’t the greatest right now, which is why I’ve been trying to toss some greens into my smoothies — gotta get ’em in somehow!

    Classic snacks… always and forever a banana with AB. Toss some chocolate in there, and I’m basically in heaven.

  10. Mmm a bowl of cinnamon toast crunch and golden grahams was my breakfast today with cherries and craisins, and it was delicious! I am a consistent salad maker haha. I chop the same veggies every weekend, and it just makes it much easier during the week And it was spring weather yesterday and monday, but snow is on the way this afternoon. No me gusta!

  11. Hahahah I love that you call yourself a lazy salad maker. That is too cute. Sometimes salads can be too much work though and I just want to eat. I can be lazy too and just throw a few things on top of lettuce and be done with it.

  12. MIND IS BLOWN. I just discovered coconut butter last night. But behold, they make chocolate coconut butter? Psssh. I almost wish I didn’t see that, now I have to wait to polish off this jar before I can’t experience life haha. What brand do you recommend for the chocolate? I wish the stuff wasn’t so darn expensive, somehow I convinced myself the $9.50 splurge was okay o__o

  14. It looks like a great day of eats. I typically have a simple type salad for lunch. Sometimes simple is good, and you can’t beat a quick and easy meal.

  15. I’m really lazy with side salads, but I tend to put more effort into meal sized salads. I love any salad with kale, tofu, avocado, carrots, and tahini dressing!

    What the heck is with this weather!?! It was +14 yesterday and now all this snow?! Get your act together Canada.

  17. My fav salad is my best attempt at recreating a chopped sub salad! Super duper finely chopped romaine, tomatoes, bell peppers, pickles, black olives, banana peppers, cucumbers and sometimes extra fun things like artichokes, hearts of palm, or capers. I love pickled things. Mixed up with bottled dressing or oil/vin… great with some chicken, deli meat or burger (veggie or other). I’m pretty obsessed. It is labour intensive but I make a big batch when I actually do it. Or else cough up $5 for Subway…

    Signs of Spring??? I live in the GTA sooo… nope. Can’t even talk about it. I heard on the radio we are in for an overly hot summer and I can’t effn wait.

    • oh, that sounds awesome! I used to make burger/sub salads, but it’s been a while…thanks for the inspiration! And I’m seriously fine with that, I will take anything over this cold!
  18. When I make a salad, I need to have it go out with a bang. Bring on all the toppings! I don’t really like to eat plain salads so much.. too bland. I need some excitement in my life.

  20. I used to be the salad queen too! Now I just throw some berries, pumpkin seeds, goat cheese, and avo and call it a day. But I guess that is a pretty good combo so I shouldn’t complain.
